Last night was our monthly book club and it is always hard to think of a yummy and healthy dessert that can please a crowd. (Did I mention a crowd with two expecting mommies!?! ) Make that yummy, healthy, and easy....but this Summer Strawberry Sorbet is the perfect solution, containing the trifecta of adjectives. I really cannot think of any other recipe that was as simple and as equally delicious as this. I made mine in my Cuisinart countertop Ice Cream Maker , but you could also double this recipe and make it in a traditional ice cream maker. Whatever you like! I hope you enjoy, and also, I hope you will forgive me for not taking a picture of the final product...I passed the sorbet out to my bookclub while we discussed and completely forgot--also, there wasn't any left! Looks like I pleased the crowd, expectant mommies included :) ENJOY!!
Start with just THREE ingredients....
In a pan over medium heat add 1cup of White Sugar.....
And 1 cup of water.......Heat until sugar is dissolved...now you have a simple syrup
Chop 2lbs of fresh strawberries (thawed frozen strawberries would work too)
Puree your strawberries in a blender or food processor until you get this consistency......
Add your puree to your simple syrup and stir.
Heat over stove for five minutes until well combined.
Transfer mixutre to a pan to cool. Put in Freezer and let cool for approx 30 minutes.
Once completely cooled, add to your icecream maker and let freezer for around 30-45 minutes or until it is your desired consistency. I like mine to be thick! YUM!!
Summer Strawberry Sorbet
2 pounds of strawberries halved
1c Sugar
1c Water
In a sauce pan over medium high heat, add your water and sugar until sugar has completely dissolved. While sugar is dissolving, puree your strawberries until smoothe. Once puree is smoothe, add to your simple syrup and let heat for approx five minutes. Add mixture to a container to cool in the freezer for approx 30 minutes. Once cooled, add your mixture to ice cream maker and let freezer for 30-45 minutes or until desired thickness is acheived. Enjoy!
